Vegan mayonaise

At the Sanctuary we love food, we love eating and we eat with love.
This is one of our favourites dressings Vegan Mayo also known as Veganaise. The starring ingredients are Cashews and Cauliflower. Here is the whole recipe for this vegan, raw, plant based and gluten free delicatessen:

- 1 cup cashews (soaked for some hours and drained)
- 1/2 cup cauliflower
- 1/2 cup water
- 3 tablespoons lemon juice
- bit of agave syrup
- 1 tablespoon of apple cider vinegar
- bit of sea salt
- pepper (white if possible)

Blend all together with the food processor adding progressively
- 1/4 cup olive oil
till you get the texture and flavour that you are looking for.

Keep it in the fridge till the last moment,
the cold helps any thicken the cashew paste.
